Grilled eggplant with Israeli couscous

This grilled eggplant with Israeli couscous is zesty, filling, and easy to prepare. If you're short on time, you can skip the salting and marinating (although I recommend it for best results!) It's a sure patio party pleaser!

Jackfruit ribs

These jackfruit ribs are mighty meaty and surprisingly speedy to make. If you’re unfamiliar with vital wheat gluten, fear not - it can be found in most baking aisles! It’s packed with a whopping 75g of protein per 100g, soy-free, low in fat, and contains important minerals like iron and selenium. Don't be shy - give it a try!

A classically comforting winter dish. This luscious recipe features hearty lentils and can be put together at a moment's notice! Fantastic for holiday gatherings and cozy nights in.

Vegan pot pie

The ultimate winter warmer: pot pie. This is a fantastic main for a winter holiday gathering and tastes great with cranberry sauce, sweet potato mash, or some roast greens. This version is prepared in a skillet but could easily be made into miniature pies using ramekins!
